Overview
Extraction of antioxidants from food waste refers to the recovery of bioactive compounds with antioxidant properties from agricultural by-products and processing residues that would otherwise be discarded. Research published in Antioxidant Activity has examined several underutilized plant materials for their antioxidant potential, including pigeon pea pod coats, cashew apple components, and other agricultural residues. Studies have investigated the efficacy of extracts from these waste materials in practical applications such as stabilizing edible oils, demonstrating that compounds recovered from food processing by-products can serve functional roles in food preservation.
