Overview
Antioxidants are molecules that inhibit oxidation and neutralize reactive free radicals, thereby protecting cells from oxidative damage; natural antioxidants are those obtained from plant, animal, and microbial sources, including vitamins, polyphenols, flavonoids, carotenoids, and other phytochemicals. They are of broad interest in nutrition, food science, and biomedicine for their potential roles in preventing oxidative injury and stabilizing perishable products. By donating electrons or hydrogen atoms, antioxidants interrupt the chain reactions through which free radicals damage lipids, proteins, and DNA. The body's endogenous defenses are complemented by dietary antioxidants, and plants in particular are rich reservoirs of phenolic and flavonoid compounds whose antioxidant capacity is commonly quantified using standardized assays alongside measurements of total phenolic and flavonoid content. Beyond potential health benefits, natural antioxidants are studied as alternatives to synthetic preservatives for retarding oxidative spoilage in foods and oils.
