Overview
Antioxidant Activity determination refers to the analytical measurement of a sample's capacity to scavenge free radicals, chelate prooxidant metal ions, or otherwise inhibit oxidative reactions. Because no single assay captures every mechanism, antioxidant capacity is typically characterized using complementary methods grouped by their chemistry: single-electron-transfer assays such as DPPH and ABTS radical scavenging, ferric reducing antioxidant power, and the Folin-Ciocalteu total phenolic measurement; and hydrogen-atom-transfer assays such as oxygen radical absorbance capacity. Results depend strongly on extraction solvent, pH, the reference standard chosen, and whether lipophilic or hydrophilic fractions are assessed, so comparison and standardization of protocols are recurring methodological concerns. The work in this area applies these techniques to plant extracts, medicinal herbs, fruits, legumes, and food matrices, often correlating measured radical-scavenging activity with total phenolic and flavonoid content and examining how processing or solvent conditions modify antioxidant yield. Studies also extend antioxidant assessment to biological systems, including cell-free models, cardiomyoblast cultures, and isolated mitochondria, to relate in vitro capacity to protection against oxidative injury. The journal publishes peer-reviewed research on assay development, validation, and the comparative evaluation of antioxidant capacity across natural products and foods.
