Overview

Antioxidants are molecules that inhibit oxidation by neutralizing reactive oxygen species and free radicals, unstable molecules that can damage cells, proteins, lipids, and DNA. By donating electrons or scavenging radicals, antioxidants help limit oxidative stress, a state implicated in aging and in chronic conditions such as cardiovascular disease, cancer, and neurodegeneration. They include endogenous defenses such as enzymes and dietary compounds such as vitamins C and E, carotenoids, and a wide range of plant-derived polyphenols and flavonoids. Research published in this area extensively characterizes antioxidant activity in natural products and the methods used to measure it. Studies include the antioxidant activity of Surinamese medicinal plants with adaptogenic properties and its correlation with total phenolic content, comparisons of analytical methods for measuring total antioxidant status, reappraisal of the total antioxidant capacity of foods such as commercial orange juices, and investigations of how solvent pH affects the phytochemical and antioxidant potential of plant extracts including Glycyrrhiza glabra and Asparagus racemosus. Additional work evaluates antioxidant micronutrients in metabolic syndrome and the antioxidant and hepatoprotective activities of tea polysaccharides. This page gathers peer-reviewed, open-access research relevant to antioxidant chemistry, measurement, and biological activity.
