Peptones are water soluble protein fragments resulting from the hydrolysis of proteins during digestion. They are used in the diagnosis and treatment of various diseases, as well as in research studies. In particular, peptones are used as a nutrient supplement in cell culture media, as a food source for bacteria and fungi, and to study the action of enzymes, proteins, and drugs. Peptones also possess antimicrobial properties, and can be used in food production processes to inhibit the growth of disease-causing organisms.
