Overview

Human nutrition is the science of how the body obtains and uses the nutrients in food to sustain life, growth, and health. It studies the macronutrients that provide energy and structural material, the vitamins and minerals required for metabolism and tissue function, water, and the bioactive constituents of foods, together with the processes of digestion, absorption, transport, and metabolism that determine their availability and effect. The field defines nutrient requirements across the life course, characterizes the consequences of deficiency and excess, and increasingly addresses the interaction of diet with the gut microbiota and with gene expression through nutritional epigenetics. It integrates biochemistry and physiology with dietary assessment and the study of food composition. Peer-reviewed research in this area examines the interplay of epigenetics and nutrition, the micronutrient composition of foods such as cultivated mushrooms and trace elements in seeds, the role of the gut microbiota in establishing an optimal diet, the toxicological significance of biogenic amines, culturally tailored dietary interventions, and the nutritional status and knowledge of specific populations. Studies combine food-composition analysis, observational and intervention research, and review across diverse settings. This work connects the chemistry and metabolism of nutrients to human health. The journal publishes peer-reviewed research in human nutrition addressing nutrient function, dietary composition, and nutritional status.
