Overview

Cholesterol is a sterol lipid, a waxy molecule present in the membranes of all animal cells, where it modulates membrane fluidity and permeability and serves as the biosynthetic precursor of steroid hormones, vitamin D, and bile acids. Because it is insoluble in water, cholesterol is transported in the bloodstream within lipoprotein particles, chiefly low-density lipoprotein (LDL) and high-density lipoprotein (HDL), whose balance is a key determinant of cardiovascular risk: elevated LDL cholesterol promotes atherosclerosis, whereas HDL participates in reverse cholesterol transport. Cholesterol homeostasis reflects the interplay of dietary intake, endogenous synthesis, and clearance, and it is closely linked to broader lipid metabolism and cardiometabolic health. Nutrition research examines how diet and lifestyle modify blood lipid profiles, including the effects of foods, functional foods, and dietary patterns on total, LDL, and HDL cholesterol and on related markers such as homocysteine, as well as culturally tailored interventions to reduce cardiometabolic risk. Studies also address cholesterol in the context of postprandial lipaemia, fermented foods and probiotics, and conditions such as menopause and diabetes. Dietary modulation of cholesterol thus connects lipid biochemistry to disease prevention. The journal publishes peer-reviewed research on lipid metabolism, cholesterol, and dietary influences on cardiometabolic health.
