Exopolysaccharides

Exopolysaccharides are carbohydrates made up of long chains of sugar molecules. They are produced by some bacteria and have many uses, including improving plant resistance to drought, maintaining water levels in soils, and as food additives. Exopolysaccharides also have potential applications as food stabilizers, thickeners, films and coatings, and antibiotic and immunological additives. They can also be used in wound healing and bioremediation of contaminated soils. As such, exopolysaccharides are vital for numerous biotechnological and medical processes, and are thus highly significant in our world today.
