Overview

Nutrition is the science of how food and its constituent nutrients affect the body, encompassing the intake, digestion, absorption, and metabolism of carbohydrates, proteins, fats, vitamins, minerals, and water, and the relationship between diet and health. In the context of Human Health Research, nutrition examines how dietary patterns and specific nutrients influence growth, development, immune function, and the risk of chronic diseases such as heart disease, diabetes, and cancer, as well as how nutritional status varies across populations and life stages. This evidence base informs dietary guidance, public health interventions, and clinical care. Research published in Human Health Research and allied titles addresses many of these themes, including an investigation of dietetics and nutritional interests during the COVID-19 pandemic, the utilization of nutrition services by pregnant women in Moshi, Tanzania, a study of nutrition education combined with active choice to increase fruit and vegetable consumption among schoolchildren, an analysis of nutritional status and nutrition-related knowledge among urban adolescent girls in Bangladesh, and work on epigenetics and nutrition. This page gathers peer-reviewed, open-access research relevant to nutrition and the role of diet in human health.
