Lipases
Lipases are enzymes that catalyze the hydrolysis of lipids, which are fats and oils found in biological tissues, as well as in food sources. They are important for the digestion, absorption and storage of dietary lipids, as well as for the synthesis of lipids that are essential for cell and organ function. In addition, lipases are used in a variety of industries, such as the food industry, where they are used to produce flavorings and emulsifiers, and in biotechnology, where they are used to convert lipids into biodiesel. Furthermore, lipases may be used as bio-catalysts in the production of other chemicals, including surfactants, biodegradable detergents, and pharmaceuticals.
