Anisakis

Anisakis is a type of parasitic nematode (roundworm) that can infect fish and other marine animals. The larvae of Anisakis can cause anisakiasis in humans, an illness that can cause abdominal pain, nausea and vomiting. Anisakis can be found in many types of fish and other marine animals, including cod, mackerel, sardines, flounder and salmon. The consumption of these types of fish without proper cooking or freezing can lead to infection. In order to reduce the risk of infection, it is important to cook fish thoroughly and freeze it before eating, as this will kill the larvae of Anisakis. Anisakis is an important food safety concern and the awareness of the need to properly cook or freeze fish is essential in preventing anisakiasis.
