Sterols

Sterols are organic molecules found in most fungi and plants. They are characterized by a carbon backbone and four fused rings. Sterols are also present in human and animal cells, including cholesterol, which is an important component of cell membranes. Additionally, sterols play an important role in modulating gene expression, regulating metabolism, and cell signaling. Furthermore, sterols are used as components in pharmaceuticals, as well as in food functionalities, such as emulsifiers, or as a fat or calorie replacer.
