Pectins
Pectins are complex carbohydrates found in the cell walls of plants. They are important for a variety of biological processes including cell adhesion, cell division, cell wall integrity, and fruit ripening. Pectins also have a range of industrial applications, including being used in food processing as a thickening agent, stabilizer, and gelling agent. They are also used in the pharmaceutical and cosmetic industries, as well as in the production of paper and other products. Pectins are increasingly seen as a useful source of dietary fiber due to their ability to bind water and slow digestion, thereby providing satiety and protection from obesity and diabetes.
