Gluten

Gluten is a naturally-occurring protein found in wheat, rye and barley that gives bread and other baked goods their structure and texture. It is also found in many processed foods such as cereals, sauces and pastas. It is an essential part of a healthy diet, providing essential nutrients and fiber. For those with gluten intolerance or celiac disease, however, gluten can cause serious health problems. A gluten-free diet is the only way to control these conditions. For others, some evidence suggests that a gluten-free diet may reduce inflammation and improve overall health.
