Exopolysaccharides
Exopolysaccharides (EPS) are complex glucose molecules that are produced by certain bacteria. They are composed of repeating sugar units and are used by bacteria in a variety of ways. In particular, EPS are used to form biofilms, which are communities of bacteria that can adhere to a surface and protect the bacteria from external environmental stresses, such as predation or environmental changes. EPS also have a wide range of commercial and industrial applications, such as the production of food and pharmaceutical products, as well as water treatment and soil remediation. In addition, EPS also have a number of biomedical applications, including wound healing, tissue engineering, and drug delivery.
