Lipases
Lipases are a type of enzymes that catalyze the breaking down of dietary fats into simpler molecules such as glycerol and fatty acids. This reaction is known as lipolysis. Lipases are found naturally in the human body and widely used in the food, cosmetics, pharmaceutical and biotechnology industries. They are essential for the digestion of dietary fats and for lipid metabolism. They also have potential as industrial catalysts, as they can be used to produce biodiesel and other fatty acids used in the chemical industry. Lipases are also important in detergent production.
