Glycoside Hydrolases
Glycoside hydrolases are enzymes that catalyze the hydrolysis (breakdown) of glycosidic bonds - the chemical linkages that join monosaccharides (sugars) to form polysaccharides (complex carbohydrates). These enzymes are involved in a variety of biological processes and are essential for the digestion of complex carbohydrates. Glycoside hydrolases are also used for industrial applications such as the production of food ingredients, waste treatment, and biofuel production. The use of glycoside hydrolases is rapidly increasing due to their ability to break down complex carbohydrate molecules into more useful compounds, making them a versatile and valuable tool in the biotechnology field.
