Lactococcus
lactis Lactococcus lactis is a lactic acid-producing bacterium found in dairy products and a model organism for lactic acid bacteria research. It is used in the production of fermented foods such as cheese and yoghurt. L. lactis has been studied for its potential to produce health-promoting metabolites and also for its use in food production. Studies have focused on its potential to produce compounds such as vitamins and antioxidants, as well as its potential to improve food preservation. Lactococcus lactis is an important model organism that provides a great insight into lactic acid bacteria, which has many relevant applications in food production, health and preservation.
