Group a Streptococci
Group A Streptococci (GAS) are Gram-positive, round-shaped bacteria that are part of the normal flora in the throat, nose and skin of the human body. GAS is responsible for a range of illnesses in humans including strep throat, skin and wound infections, toxic shock syndrome and necrotizing fasciitis. GAS infections can be treated with antibiotics, although GAS has become increasingly resistant to some antibiotics. GAS is also significant in the food industry where it can cause food-borne illnesses. Effective food safety control measures, such as temperature control and hygiene practices, are necessary for preventing GAS contamination of food.
