Carotenoids

Carotenoids are molecules produced by plants and other photosynthetic organisms that give them their characteristic red, orange and yellow colors. These molecules are important because they act as antioxidants, helping to protect plants from damage caused by ultraviolet light and other forms of stress. Furthermore, carotenoids are beneficial for human health, being linked to reduced risk of certain types of cancer, heart disease and even age-related macular degeneration. Finally, carotenoids are used as food additives to improve the color of foods such as butter, margarine and other processed goods.
